Chocolate Candy Cane Cookies

A favorite cookie to be enjoyed during the holidays. Yum, enjoy!

Chocolate Candy Cane Cookies

Ingredients:
Cookies
1 3/4 cups all purpose flour
1/2 cup unsweetened cocoa powder (preferably Dutch-process)
1/4 teaspoon salt
1 cup sugar
3/4 cup (1 1/2 sticks) unsalted butter, room temperature
1 large egg

Filling
1 cup plus 2 tablespoons powdered sugar
3/4 cup (1 1/2 sticks) unsalted butter, room temperature
3/4 teaspoon peppermint extract
2 drops (or more) red food coloring

1/2 cup crushed red-and-white-striped candy canes or hard peppermint candies (about 4 ounces)

Preparation:
For cookies:
Whisk flour, cocoa, and salt in medium bowl to blend. Using electric mixer, beat sugar and butter in large bowl until well blended. Beat in egg. Add dry ingredients; beat until blended. Refrigerate dough 1 hour.

Preheat oven to 350°F. Line 2 baking sheets with parchment paper. Scoop out dough by level tablespoonfuls, then roll into smooth balls. Place balls on prepared baking sheets, spacing about 2 inches apart. Using bottom of glass or hands, flatten each ball to 2-inch round (edges will crack). Bake until cookies no longer look wet and small indentation appears when tops of cookies are lightly touched with fingers, about 11 minutes (do not overbake or cookies will become too crisp). Cool on sheet 5 minutes. Transfer chocolate cookies to racks and cool completely.

For filling:
Using electric mixer, beat powdered sugar and butter in medium bowl until well blended. Add peppermint extract and 2 drops food coloring. Beat until light pink and well blended, adding more food coloring by dropfuls if darker pink color is desired. Spread 2 generous teaspoons filling evenly over flat side of 1 cookie to edges; top with another cookie, flat side down, pressing gently to adhere. Repeat with remaining cookies and peppermint filling.

Place crushed candy canes on plate. Roll edges of cookie sandwiches in crushed candies (candies will adhere to filling). (Cookie sandwiches can be made ahead. Store in single layer in airtight container at room temperature up to 3 days or freeze up to 2 weeks.)

Today, we had one of our monthly employee luncheons, where the hotel provided some main courses for the staff, and we all brought in a side dish. It was extraodinary to see how many countries we as a team represent based on the wide array of food dishes. We feasted on foods from fried chicken and potato salad to tortillas and mole chicken (pronounced "mol-LAY"), to bulgarian salads and hummus.
Individually, we all come from vastly different places...yet somehow, as we break bread together and talk amongst each other, it becomes inherently clear how well we work together as a team. We pull from all of our backgrounds to provide a quality product for all of our guests as a singular team. We are Homewood.

This consists of a light dinner and happy hour, with fare ranging from penne pasta alfredo with steamed green beans and garlic toast to pulled pork BBQ sliders with cole slaw to beef fajitas with beans and rice. Each morning, we offer a wonderful and complimentary hot breakfast. There are a variety of items from which our guests can choose. These include homemade waffles, eggs, sausage, bacon, pastries, bagels, yogurt, oatmeal, juices, milk, coffee, tea, cereal, and sometimes, even breakfast sandwiches. It is from 6:30am-9:30am from Monday through Friday and 7am-10am on the weekend mornings.

The Great American Grill

One of the benefits to having two separate hotels in one building is that we get to share some of our amenities, such as the pool, spa, fitness center and meeting rooms. Of special interest, however, is the Great American Grill, which is a standard for Hilton Garden Inns, but not for Homewood Suites. In fact, Homewood Suites brand hotels never even have a restaurant/bar. Therefore we are very fortunate to not only be able to offer that to our guests, but to have the culinary expertise of our talanted chefs here as well.
The grill offers a variety of items in the American style. These include everything from chicken tenders, salads, wraps, burgers, pizza, pasta, New York strip steak, and salmon toscana to cheesecake, chocolate cake, and fresh apple pie--all at very reasonable prices.
The bar also offers a variety of drinks from beer and wine to cocktails.

Three months!

Life at Homewood has become a well-oiled machine over these past three months. As a staff, we have grown stronger together, welcoming new members on board as our occupancy remains in high numbers. Over all, we are a team who has gelled together to produce an all around "can-do" attitude, one that makes serving our guests so much easier.

Take for example, when the front desk gets a call for more towels. Each staff member along the path who aids in getting our guests more towels is absolutely happy to help out not only for the guests, but for the other staff members as well.
We're truly fortunate to have such wonderful people working behind the scenes.

We are so excited to have a great team to lead the Homewood Suites to "superstar" status with excellent customer service and incredible sales efforts. But first, we must train to "be the best". Our Director of Human Resources, Liliana Vela, leads our team to that very goal. She is doing an incredible job of coordinating with all of our team members schedules in order to accomplish all of the training prior to our opening. I look forward to seeing great things from each and every one of these team members. I can't tell you how proud and excited I already am as the General Manager to work with such talented individuals.

Our visit to Hilton Reservations Call Center in Hazleton,Pa.

Of all the days to visit the Hazleton call center, there was a snowstorm! We made it after 3 hours of bonding in the car; got a little lost too. Met with all the wonderful agents who help in booking reservations for guests at the hotel.

Time surely does fly fast! The hotel is almost 90% done, YEA! On one of our daily walk throughs, Vanessa Stanley(General Manager) and Alexandria Kareem(Front Office Manager) tested the switch in the KITCHEN! Surely we can't wait to serve up some hot suite start breakfast buffet.

I just can't believe the hotel is almost done! It seems just like yesterday that all we had to show for a hotel was a metal structure. The whole process from grounbreaking to this stage has been a phenomenal experience that has really made selling it a 'suite' treat.
